1tsp baking powder
1/2 tsp baking soda
50g coconut oil (melted)
120g low-fat Greek yoghurt
120g sweetener (or sugar)
2 eggs
2 tbsp honey
200g strawberries, chopped
Pinch of salt
1 tbsp oil (to brush the baking tray)
Optional: Handful of white chocolate chips and flaked almonds
Directions
- Preheat the oven to 180°C (350°F).
- In a blender, combine the eggs, oats, baking powder, baking soda, melted coconut oil, yoghurt, sweetener (or sugar), honey, and salt. Blend until smooth.
- Chop the strawberries into squares.
- Brush a baking tray with oil, then pour the batter onto the tray. Add the chopped strawberries and optional white chocolate chips, then gently fold them into the batter with a spatula.
- Optional: Sprinkle a handful of flaked almonds on top of the oatmeal batter.
