  • 140g Oatmeal flour

  • 100g Erythritol (or sugar)

  • 50g Sugar

  • 3 eggs

  • 300g Greek yogurt

  • 1 tsp baking powder

  • 1 tsp vanilla extract

  • Ingredients for the Glaze:
  • 1/2 cup of your favourite chocolate, melted

  • Sprinkles

Directions

  • Mix Donut Ingredients: In a mixing bowl, combine the oat flour, erythritol (or sugar), sugar, eggs, Greek yoghurt, baking powder, and vanilla extract. Mix until all the ingredients are well combined and you have a smooth batter.
  • Preparation: Preheat your oven to 180°C (350°F). Prepare your silicone donut moulds by lightly greasing them or using non-stick spray.
  • Fill Donut Molds: Distribute the batter evenly among the silicone moulds, filling each one about three-quarters full.
  • Bake: Place the filled moulds in the preheated oven and bake for 15-18 minutes at 180°C (350°F), or until the donuts are lightly golden and a toothpick inserted into the centre comes out clean.
  • Cool: Once baked, remove the donuts from the oven and let them cool in the moulds for a few minutes before transferring them to a wire rack to cool completely.
  • Glaze: While the donuts are cooling, melt your favourite chocolate in a microwave-safe bowl. Dip each cooled donut into the melted chocolate, allowing any excess to drip off, then place them back on the wire rack. Sprinkle with your favourite sprinkles while the chocolate is still warm.
