Ingredients

  • 200g oats

  • 1tsp baking powder

  • 1/2 tsp baking soda

  • 50g coconut oil (melted)

  • 120g low-fat Greek yoghurt

  • 120g sweetener (or sugar)

  • 2 eggs

  • 2 tbsp honey

  • 150g blueberries

  • Zest of 1 lemon

  • Pinch of salt

  • 1 tbsp oil (to cover the baking tray)

  • Optional: flaked almonds

Directions

  • Preheat Your Oven: Preheat the oven to 180°C (350°F).
  • Prepare the Batter: In a blender, combine the eggs, oats, baking powder, baking soda, melted coconut oil, yoghurt, sweetener (or sugar), honey, and salt. Blend until smooth and well combined.
  • Add Lemon Zest: Incorporate the lemon zest into the batter, stirring gently to mix well.
  • Prepare the Baking Tray: Brush a baking tray with oil to prevent sticking.
  • Combine and Fold: Pour the batter into the prepared baking tray. Add the blueberries and gently fold them into the batter with a spatula.
  • Optional Topping: Sprinkle a handful of flaked almonds on top for extra texture and flavour.
