Ingredients

  • 2 bananas

  • 3 eggs

  • 1/3 cup peanut butter

  • 1/4 cup maple syrup

  • 2 tbsp coconut oil

  • 1/2 cup almond milk (or milk of your preference)

  • 1 cup rolled oats

  • 1 tsp baking powder

  • 1 tsp vanilla extract

  • 150g fresh blueberries

  • Pinch of salt

  • Optional: Icing sugar to sprinkle after baking

Directions

  • Preheat the Oven: Set your oven to 180ºC (350ºF).
  • Blend Ingredients: In a blender, combine the bananas, eggs, peanut butter, maple syrup, coconut oil, almond milk, rolled oats, baking powder, vanilla extract, and a pinch of salt. Blend until the mixture is smooth and well combined.
  • Prepare Muffin Tins: Lightly grease or line a muffin tin with paper liners.
  • Add Blueberries: Scoop the batter into the prepared muffin tins. Evenly distribute the blueberries on top of the batter, or alternatively, fold the blueberries into the batter with a spatula before scooping.
  • Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.
  • Cool down: Remove the muffins from the oven and let them cool down in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.
  • Optional Finishing Touch: Once the muffins are completely cooled, sprinkle with icing sugar if desired.

Scoop your batter into your muffin tins and add the blueberries on top of the batter, distributing evenly between muffins. (Alternatively, you can fold in the blueberries in the batter with a spatula and then scoop on your muffin tins, both methods work well). Bake for about 20-25 minutes or until when inserting a toothpick it comes out clean. Remove from the oven, and let cool for 5 minutes before taking them out of the mould.
