2 tbsp coconut oil
1/2 cup almond milk (or milk of your preference)
1 cup rolled oats
1 tsp baking powder
1 tsp vanilla extract
150g fresh blueberries
Pinch of salt
Optional: Icing sugar to sprinkle after baking
Directions
- Preheat the Oven: Set your oven to 180ºC (350ºF).
- Blend Ingredients: In a blender, combine the bananas, eggs, peanut butter, maple syrup, coconut oil, almond milk, rolled oats, baking powder, vanilla extract, and a pinch of salt. Blend until the mixture is smooth and well combined.
- Prepare Muffin Tins: Lightly grease or line a muffin tin with paper liners.
