Ingredients

  • Veggies:
  • 1 Red onion

  • 2 Bell peppers

  • 3 Garlic cloves

  • 1 tsp Salt

  • 1 tbsp olive oil

  • For the Chicken:
  • 600g Boneless chicken breast

  • 2 tsp Smoked paprika

  • 2 tsp garlic granules

  • 1 tsp Cumin

  • 1 tsp Dried coriander

  • 1 tsp Salt

  • For the BBQ Style Sauce:
  • 1/4 cup Ketchup

  • 1/4 cup Mustard

  • 1 tbsp Honey

  • 1 tbsp Olive oil

Directions

  • Preheat the oven to 180°C (350°F).
  • Chop the chicken into strips and place it in a bowl.
  • In a small bowl combine all the spices and salt for the chicken.
  • In another bowl combine the ingredients for the BBQ Style sauce.
  • Add the spices and the sauce mixture to the chicken and mix until well combined and set aside.
  • Chop the red onion, bell peppers, and garlic cloves, then place them on a baking tray.
  • Drizzle olive oil over the veggies and sprinkle with salt. Toss to coat evenly.
  • Bake the veggies in the preheated oven for 10 minutes.
  • Remove the veggies from the oven and add the marinated chicken on top.
  • Return the tray to the oven and bake for an additional 25 minutes, or until the chicken is cooked through.
  • Heat a skillet over medium heat and warm up the tortillas, then add the chicken covering half of the tortilla, fold and cook for a couple of minutes until the tortillas are golden brown.
  • Remove from the skillet, cut into wedges, and serve hot.
