Fluffy Double Chocolate Pancakes

1 cup wheat flour
1 cup whole-grain wheat flour
1/3 cup unsweetened cocoa
1/2 cup sugar
50g dark chocolate
2 tbsp coconut oil
2 tsp baking powder
1/2 tsp salt
3 eggs
1 1/2 cups milk
1 tsp vanilla
Directions
- Separate the eggs, whites in a bowl, and the yolks in another. Beat the egg whites until they form stiff peaks, I did this with an electric hand mixer, but you could also do it by hand (Reserve).
- In a small bowl add the dark chocolate in pieces with the coconut oil, put in the microwave in 30 seconds rounds until it is melted (Reserve)
- Add all the dried ingredients into a bowl (Flour, cocoa powder, sugar, baking powder, salt)
- In a separate bowl add the wet ingredients (Egg yolks, milk, melted chocolate, vanilla)
- Pour the wet ingredients into the dried ingredients and mix until well combined
- Fold in half of the egg whites with the help of a spatula, and then add the other half and fold again, do not over mix as we need to keep the air to make these pancakes fluffy
- Cook in a pan over medium heat for 3-4 minutes on each side
- Serve with your favourite toppings, these pancakes are not too sweet, so go ahead for a treat! I added caramel sauce and white chocolate chips
