  • 700g chicken breast

  • 1/2 cup low-fat Greek yogurt

  • 1/2 tsp dried ginger

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 2 tsp smoked paprika

  • 1 tsp ground cumin

  • Salt and pepper to taste

  • Dressing Ingredients:
  • 1/2 cup low-fat Greek yogurt

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

  • 1 garlic clove

  • 1 tbsp mustard

  • 1 tbsp honey or maple syrup

  • Bunch of fresh cilantro

  • Salt and pepper to taste

  • Veggies to assemble your bowls:
  • 2 cups cooked brown or white rice or quinoa (1/2 cup per bowl)

  • 2 cups fresh spinach or mixed greens (1/2 cup per bowl)

  • 2 cups cherry tomatoes, halved (1/2 cup per bowl)

  • 2 cups cucumber, diced (1/2 cup per bowl)

  • 1 small red onion, finely chopped

Directions

  • Prepare your chicken:
  • Prepare Marinade: In a big bowl, combine the yoghurt, spices, black pepper, and salt. Mix well.
  • Marinate Chicken: Slice the chicken breasts in half horizontally, add to the bowl and coat them thoroughly with the marinade. Cover and refrigerate for at least half an hour.
