Ingredients

  • 2 Cups oat flour (put your regular oats in a blender and blend until it has flour texture)

  • 5 Small bananas (or 4 large)

  • 1/4 cup sweetener (or sugar)

  • 1/4 Maple syrup (+2 tbsp for the chocolate mix)

  • 1/3 cup oil

  • 2 eggs

  • 1 tsp baking powder

  • 1 tsp baking soda

  • Pinch of salt

  • 2 Tablespoons cocoa powder

Directions

  • Preheat the oven to 180°C (350°F). Grease a loaf tin with oil and line it with parchment paper to prevent sticking.
  • In a large bowl, mash the bananas until smooth. Add the maple syrup, oil, eggs, and sweetener, and mix until well combined.
  • Stir in the oat flour, baking powder, baking soda, and salt until a smooth batter forms.
  • Divide the batter evenly between two bowls. In one bowl, add cocoa powder and additional maple syrup, then mix until well combined.
  • Add the vanilla mixture into the prepared loaf tin and then add the chocolate mixture on top. Use a knife to gently swirl the batters together, creating a marble effect.
  • Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the tin for 10 minutes before transferring to a wire rack to cool completely. Slice and enjoy!

Grease a loaf tin with oil and add a strip of parchment paper to make sure it doesn’t stick at the bottom. Mash the bananas and put them in a bowl. In the same bowl add the maple syrup, eggs, oil, and sweetener and mix well. Then add the oat flour, baking powder, baking soda and salt and mix again until everything is well combined. Divide the mixture into two bowls. In one of the bowls add the two tablespoons of cocoa powder plus two tablespoons of maple syrup and mix. Add the vanilla mixture to the previously greased loaf tin and then add the chocolate mixture on top. With a knife, make swirls, be careful not to overmix at this point!
