  • 2 cups oats

  • 1/2 cup peanut butter

  • 1 egg

  • 1/4 cup erythritol (or sugar)

  • 1/3 cup chocolate chips

  • Pinch of salt

Directions

  • Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
  • In a large bowl, mash the ripe bananas until smooth. Add the peanut butter, egg, and erythritol (or sugar), and mix until well combined.
  • Stir in the oats, chocolate chips, and a pinch of salt until evenly distributed.
  • Using a spoon or cookie scoop, drop the dough onto the prepared baking tray, spacing them apart to allow for spreading.
  • Use a wet fork to flatten the cookies slightly.
  • Bake in the preheated oven for 18-20 minutes or until golden brown and firm to the touch.
