This is super easy to make and it’s perfect if you like me, can’t easily find pumpkin purée at the shop. Get a butternut squash, wash and place it on a baking tray lined with parchment paper, bake in the oven at 180ºC for 45 minutes or until when you insert a knife it goes in easily. Once it has cooled down, peel it, and mash it with a fork to make the purée.
Can I make this recipe vegan?
I haven’t tried it, but if you want to make this recipe vegan, you could substitute the eggs with flax eggs (1 tablespoon of ground flaxseed mixed with 3 tablespoons of water per egg) and use plant-based milk like almond or oat milk.
How should I store the baked oats?
Store the baked oats in an airtight container in the refrigerator for up to 5 days.
Can I use a different type of nut instead of almonds?

2 eggs
1/2 cup plant-based milk
1/2 cup sweetener (or sugar)
1/2 cup brown sugar
2 tbsp melted coconut oil
2 cup oats
1/3 cup ground almonds
2 tsp mixed spice (or pumpkin spice, or cinnamon)
Pinch of salt
1 teaspoon baking powder
1 teaspoon baking soda
1/3 cup flaked almonds
Optional: 1/3 cup chocolate chips
Directions
- Preheat the Oven:
- Preheat your oven to 180°C (350°F).
- Blend the Ingredients:
- In a blender, combine the pumpkin purée, eggs, milk, sweetener (or sugar), brown sugar, melted coconut oil, oats, ground almonds, mixed spice (or pumpkin spice, or cinnamon), pinch of salt, baking powder, and baking soda. Blend until the mixture is smooth and well combined.
- If adding chocolate chips, add and fold them into the batter.
- Prepare the Baking Tray:
- Lightly brush a baking tray with oil to prevent sticking, then pour the blended batter onto the tray, spreading it evenly.
- Add Toppings:
- Sprinkle the flaked almonds evenly over the top of the batter.
- Bake:
- Place the tray in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
