Ingredients

  • 1 Bell pepper, diced

  • 1 Onion, diced

  • 500g Lean beef mince

  • 1 can (400g) Chickpeas, drained and rinsed

  • 1 can (400g) Chopped tomatoes

  • 1 teaspoon Cumin

  • 1 teaspoon Smoked paprika

  • 1 teaspoon Garlic powder

  • 1 teaspoon Onion powder

  • 2 tablespoons Worcestershire sauce

  • 2 tablespoons Soy sauce

  • Chopped parsley, for garnish

  • 1 tablespoon Olive oil

  • Salt and pepper, to taste

Directions

  • Heat olive oil in a large pot over medium heat. Add diced onion and bell pepper, and sauté until softened about 5 minutes.
  • Add lean beef mince to the pot and cook until browned, breaking it apart with a wooden spoon as it cooks.
  • Stir in chickpeas, chopped tomatoes, cumin, paprika, garlic powder, onion powder, Worcestershire sauce, and soy sauce. Season with salt and pepper to taste.
  • Bring the stew to a simmer, then reduce the heat to low and let it simmer for 15-20 minutes, stirring occasionally.
  • Once the stew has thickened and the flavours have melded together, remove it from the heat.
