Tips to make these Spiced Oats Cookies:
- Chill the Dough: Don’t skip the step of chilling the dough. It helps the cookies hold their shape during baking and enhances the flavours.
- Evenly-Sized Cookies: Use a cookie scoop or a scale to weigh your dough to ensure all your cookies are the same size, which helps them bake evenly.
- Avoid Over-Mixing: When adding the oats, mix just until incorporated to avoid breaking them down too much, which could affect the texture.
- Storage: Store the cookies in an airtight container to keep them fresh for up to a week.
Frequently Asked Questions:
Can I substitute the date syrup with another sweetener?
Yes, you can use honey or maple syrup as a substitute. They will slightly alter the flavour but still work well.
Can I make these cookies gluten-free?
Yes, you can substitute the all-purpose flour with a gluten-free flour blend. Just make sure the oats are certified gluten-free.
How can I make the cookies softer?
For softer cookies, you can slightly underbake them, removing them from the oven when the edges are set but the centres are still soft. However, if you bake them until golden brown they will still be soft.

minutesIngredients
226g butter (room temperature)
200g brown sugar
30g granulated sugar
2 eggs
1 tbsp date syrup (or honey)
195g all-purpose flour
2 tsp mixed spice (or pumpkin spice, or cinnamon)
1 tsp bicarbonate of soda
1 tsp baking powder
300g oats
200g dark chocolate chips
Directions
- Cream the Butter and Sugars:
- In a large mixing bowl, beat the room-temperature butter with the brown sugar and granulated sugar until light and fluffy. This should take about 2-3 minutes.
- Incorporate the Wet Ingredients:
- Gradually add the slightly beaten eggs to the butter and sugar mixture, mixing well after each addition. Pour in the date syrup (or honey) and mix until fully combined.
- Sift and Add Dry Ingredients:
- Sift together the all-purpose flour, bicarbonate of soda, baking powder, and mixed spice. Gradually add the dry ingredients to the wet mixture in three batches, mixing until just combined.
- Mix in Oats and Chocolate Chips:
- Add the oats in two batches, mixing gently to avoid over-mixing, which can break down the oats too much. Fold in the dark chocolate chips until evenly distributed throughout the dough.
- Chill the Dough:
- Cover the dough and refrigerate for at least one hour. This step will ensure the cookies hold their shape during baking.
- Shape the Cookies:
- Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper. Using a cookie scoop or your hands, portion the dough into cookies weighing approximately 60-62g each. Lightly flatten each cookie with your fingers.
- Bake:
- Bake in the preheated oven for 12-14 minutes, or until the edges are golden brown and the centres are just set or until golden brown, depending on your preference.
- Cool and Enjoy:
- Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Enjoy these perfectly spiced, chewy oats cookies with a cup of tea or coffee!
