Ingredients

  • Ingredients for the Filling:
  • 1 big rustic bread loaf

  • 2 tbsp olive oil

  • 150g goat cheese

  • 100g mozzarella cheese

  • 100g cherry tomatoes (halved)

  • 100g roasted red bell peppers (sliced).

  • 2 handfuls rocket (arugula)

  • 1/4 cup Parmesan cheese

  • Freshly ground pepper, to taste

  • Balsamic glaze, to taste

  • For the Sweet Balsamic Onions:
  • 2 red onions

  • 2 tbsp brown sugar

  • 2 tbsp balsamic vinegar

  • 2 tbsp water

  • 1/2 tsp salt

  • 1 tbsp olive oil (for cooking)

Directions

  • Prepare the Sweet Balsamic Onions:
  • Slice the red onions thinly.
  • Heat 1 tablespoon of olive oil in a pan over medium heat. Add the sliced onions and cook until they start to soften, about 5 minutes.
  • Add the brown sugar, balsamic vinegar, water, and a pinch of salt to the pan. Stir to combine.
  • Reduce the heat to low and simmer, stirring occasionally, until the onions are caramelized and the liquid has reduced, about 15-20 minutes. Remove from heat and set aside.
  • Assemble the Sandwich:
  • Preheat the oven to 350°F (175°C).
  • Slice the rustic loaf horizontally and drizzle both sides with olive oil.
